Method
Step 1
Use fork or knife to pierce skin of eggplant in multiple areas to that it will cook through the middle
Step 2
On open flame char eggplant and bell peppers until blackened and cooked through (you can substitute cooking over flame by roasting vegetables in preheated oven at 400F for 20-30 minutes)

Step 3
Once cooked, remove eggplant and bell peppers from heat and allow to cool so it can be handled by hand
Step 4
Scoop out eggplant meat and discard charred skin. Remove charred bell pepper skin, stem, and seeds. Cut bell pepper into manageable pieces
Step 5
In food processor (or blender) combine eggplant, red bell pepper, garlic cloves, white vinegar, salt, and pepper. Blend till desired consistency
Step 6
In medium hot pot/pan, heat tbsp of olive oil. Add ajvar sauce into pan, stir regularly and cook down for 5 to 10 minutes.
