One Pot Spaghetti Bolognese (serves 5 - 6)

Sharing a quick midweeker today!! This is my SPEEDY Bolognese that I make in one pot. The trick here is: 1) to use tomato passata for an instant thick-rich sauce without 20 minutes of simmering, and to ensure sauce isn’t too starchy (passata can take more starch than crushed tomato); and 2) use beef stock instead of cubes to add seasoning AND thin the sauce enough so the pasta can be cooked like you do in a big pot of boiling water. . This works a treat, and it’s phenomenally delicious! You can get this on the table in 20 minutes once you’ve chopped your onion & garlic 👍🏼 - N x ❤️ . One Pot Spaghetti Bolognese (serves 5 - 6) . 1 tbsp olive oil 2 garlic cloves , minced 1 onion , finely chopped 500g / 1 lb beef mince (ground beef) 700g / 24.5 oz tomato passata (tomato puree) 3 cups beef broth (or stock cubes + water) 2 tsp Italian mixed herbs 2 tsp Worcestershire Sauce 2 tbsp tomato paste 1/4 – ½ tsp red pepper flakes (chilli flakes, optional) 3/4 tsp each salt and pepper 350g / 12 oz spaghetti , uncooked . 1. Heat oil over high heat in a large heavy based pot. Cook garlic and onion 2 min. Add beef, cook 2 min until it changes from red to brown. 2. Pour in passata, then pour some beef stock into the empty bottle, shake to clean. Pour into pot, then add remaining ingredients except pasta. 3. Stir well, then bring to boil. Fan pasta out in pot, leave 30 seconds, then push it under. Cook 12 minutes, stirring ever minute or so at the beginning then toss more frequently towards the end. Turn heat down to medium around the 8 minute mark. 4. Take it off the stove when pasta is a touch harder than you like, then toss off the stove for 30 seconds or so until the pasta finishes cooking and sauce has thickened to a rich, thick sauce that coats the pasta. Serve immediately with parmesan! .
