Step 1
Lightly geese a large pan then add the tortilla. Make sure the heat is not on yet. Add 2 tbsp tomato sauce and spread on the base . Now sprinkle some grated kashkaval cheese ( use grated mozarella if you can’t get kashkaval)

Step 2
Now add 4 eggs on top of the cheese and season with salt and pepper . Place the next tortilla on top then press down gently . Cover with a lid and on low heat cook about 7 minutes or until you see the cheese inside has melted down

Flip tortilla then add 2 tbsp tomatoes sauce on top sprinkle with a little more grated cheese then add sliced tomatoes . Season the tomatoes with salt and black pepper then add soft sliced mozarella and some torn basil leaves . You can cover with a lid and cook until the cheese is melted or if your frying pan is oven proof heat under a grill at 210 c for about 8 minutes
