Tuna Mayo, sweet corn and spinach wrap

Instructions

Step 1
1 Place each wrap on top of a square of baking paper that's slightly bigger. Add a line of the spinach to each wrap.
Step 2
2 Mix the tuna and sweetcorn with the mayonnaise, season and add a squeeze of lemon juice. (If you have any herbs such as parsley lying around, add those too.)
Step 3
3 Divide the tuna mixture between each wrap. Chop the cucumber, carrot and pepper into thin sticks and add them in lines to the wraps. I like to add some chilli flakes to mine at this point as well.
Step 4
4 Roll up the wraps inside the baking paper and seal with tape. The wraps will keep in the fridge for up to 3 days. I like to have mine with a side of piccalilli!
