Step 1
Rinse 175g of Merchant Gourmet Puy Lentils, drain then place in a pan with 1 litre cold water
Step 2
Add 1/2 tsp dried thyme, 1 bayleaf, 100g of chopped carrot and bring to the boil
Step 3
Add a chicken stock cube, season with salt & pepper then reduce the heat and simmer uncovered for 15-20 minutes.
Step 4
Meanwhile add the bacon to a deep dish pan and crisp up at a high heat until the fat has rendered. Once this is. Fully cooked, remove, reserving as much fat and grease in the pan. Add the chicken and cook fully. If using chicken thighs, let the fat render and the skin brown before adding the onion. Cook until cooked.
Step 5
Combine the chicken mixture with the lentils, add 2 tbsp of fresh parsley, 2 heaped tbsp of crème fraîche, season & serve.
