Step 1
Wash the rice. Heat up some coconut oil in a pan and fry the rice for several minutes. Add double the amount of water (rice:water 1:2 ratio), some saffron and the cardamom. Cook with closed lid for about 15 minutes until all the water is soaked up and the rice is fluffy
Step 2
Roast pistachios and sesame seeds until slightly browned and fragrant. Zest and juice the lemons the lemons.
Step 3
Mix yoghurt with juice and zest of one lemon and pasley. Add salt and pepper to taste.
Step 4
When the rice is fluffy, add more coconut oil and fry at high temperature for 8 more minutes, until a crust forms on the bottom. Add pistachios, sesame, the rest of the lemon zest and juice. Serve with pomegranate seeds (or cut up strawberries) and some yogurt.
