Step 1
In a bowl mix all the spices (Gochujang 2 tbsp, Gochugaru 1 tbsp, Mushroom powder 1 tsp, Soy sauce 1 tbsp, Chili Oil 1 tbsp, Corn/rice syrup 1 tbsp, Rice vinegar 1 ½ tbsp, Sesame oil 1 tbsp, Water 160ml).
Step 2
In a frying pan, add 1 tbsp sesame oil, chopped garlic, and stir fry all the mushrooms for about 1 minute. Add the spice blends with the mushrooms, cover with a lid and cook over medium heat for 5 minutes.
Step 3
Cut the spring onions and chives into 3 inches and add it with the mushrooms, and cook it for another 3 minutes. Try not to reduce the sauce too much.
Step 4
Add some toasted sesame seed on the mushroom before taking it off the heat.
Step 5
Add the noodles in boiling water and cook it for 5-6 minutes until the noodles are cooked through. Strain the noodles and add it into cold water to stop cooking. Strain the noodles after 5 minutes.
Step 6
In a noodle bowl, add one portion of the noodles, and add 1 tbsp sesame oil to coat the noodles. Add half of the mushrooms on top of the noodles, garnish it with some chopped spring onions.
Step 7
Deep fry some enoki mushroom to put it on top of the noodles.
