2 lbsground chicken

3 cupsRitz crackers

1 ½ tablespoonblack pepper

1 tablespoonpaprika

1 tablespoondried basil

1 teaspooncelery salt

1 teaspoonground cumin

¾ teaspoonCayenne pepper

2 cupsblue cheese
crumbled

Canola oil
for frying, decent amount

2eggs

1 stickunsalted butter

1 teaspoonminced garlic

1 tablespoonpickled jalapenos
minced

1 x 12 ozred hot sauce

Instructions
Step 1
In a large bowl, combine chicken, 1.5 cups of Ritz crackers (1.5 sleeves), black pepper, paprika, basil, celery salt, cumin, half of cayenne pepper, 1 cup blue cheese. Mix well. Optional: refrigerate for 4-24 hours.
Step 2
Preheat oven to 275 degrees. Pour 2 inches of canola oil in a small to medium skillet and heat the oil to 350 degrees over medium-high heat. Set a cooling rack over a baking sheet.

Step 3
Form the chicken mixture into walnut-sized balls and set aside on a plate. Beat the eggs in a shallow bowl. Dip each ball in the eggs, then roll it into the crackers, covering it thoroughly.
Step 4
Add the balls to the hot oil (in batches to prevent overcrowding) and fry until golden brown, about 2 minutes. They cook quickly! Place on rack over pan.
Step 5
Place the pan in the oven and bake for 10 minutes. Meanwhile, in a small saucepan over low heat, melt the butter. Add the garlic and jalapenos and cook for 2 minutes. Stir in hot sauce and keep warm over low heat.
Step 6
To serve, drizzle the hot sauce over the buffalo Balls or serve as a dip on the side.
