Instructions
Step 1
Pull meat from chicken into large pieces.
Step 2
Spoon a few Tble from a 13.5 oz can of coconut milk into a medium skillet over medium high heat.
Step 3
Stir in 1-2 Tble of curry paste.
Step 4
Add Stevia, remaining coconut milk, and salt and pepper to taste.
Step 5
Bring to a simmer then add chicken. Let chicken warm through.
Step 6
Stir in a cup of fresh basil leaves.
Step 7
Serve with cauliflower rice and lime wedges.
