Beetroot Orzo with Feta

Make with a can of shoestring beets for ease. If not available, grated cooked beets will work too.
Almonds can be subbed for pine nuts.

Instructions
Step 1
Place 600mg of water into a medium saucepan and place over a high heat
Step 2
Drain and add the beets into the water as it comes to a boil and add a stock cube
Step 3
Once the water comes to a boil, add orzo
Step 4
Reduce to medium heat and simmer for 8-10 minutes until the liquid has reduced to a glaze and the orzo is soft with a slight bite
Step 5
Finely grate in the cheese and season with salt and pepper
Step 6
Scatter the almonds and feta over top of the plates after serving.
