G - 600 Calories or Under - 10-Min Greek Chicken Rice With Tzatziki
Whip up this tasty one-pot in no time! Family comfort food, packed with Mediterranean flavour from fresh lemon, dried oregano and quick, garlicky tzatziki. How is it so speedy? Diced chicken, garlic paste and ready-to-eat rice make this one a breeze to prepare. (Gluten-free, suitable for coeliacs).

Instructions
Step 1
Make the rice in the rice maker.
Step 2
Boil a kettle, then heat a large, wide-based pan (preferably non-stick) with a matching lid, with a drizzle of olive oil over a medium-high heat
Step 3
Once hot, add the diced chicken to the pan and cook for 3 min
Step 4
Meanwhile, grate the cucumber into a bowl
Step 5
Add the natural yoghurt and 1/2 tsp garlic paste
Step 6
Season with a pinch of salt and pepper and give everything a good mix up – this is your tzatziki
Step 7
Add the dried oregano to the pan with the remaining garlic paste and cook for 30 sec further
Step 8
Meanwhile, dissolve the chicken stock cube in 100ml boiled water
Step 9
Add the baby leaf spinach, chicken stock, black olives, heated rice and the juice of 1 lemon and give everything a good mix up
Step 10
Cook, covered, for 1-2 min further or until the liquid has been absorbed and the chicken is cooked through
Step 11
Cut the remaining lemon into wedges
Step 12
Set the Greek chicken rice and tzatziki in the centre of the table, ready to share
Step 13
Garnish with the lemon wedges, drizzle with olive oil, season with a grind of black pepper and let everyone dig in
