Step 1
Add water, chicken, slices of ginger (1 whole knob sliced) and garlic to a pot. Boil chicken for 60 minutes, covered on low heat. Once cooked, move chicken into an ice bath and cut chicken into small pieces. If you’re using leg quarters or thighs, you can leave whole if you prefer. For the ginger scallion sauce, grate 1 whole knob of ginger and chop up green onions. Add to bowl with salt Heat up oil and pour this over the ginger/scallion.
