Tips: Asian egg noodles are the best noodle option for this recipe as they only takes under a minute to blanch in boiling water to have the prefect consistency. If you are using other noodle options (which I do not recommend), it gets a bit tricky, you need to make sure your noodles are not over cooked in boiling water, it should be still al dente before searing them with hot oil .

Instructions

Step 1
Prepare and slice carrot, onion, scallion, clean and devein shrimp, set aside.
Step 2
Start with a pot of water with a small amount of cooking oil in it, bring to boil. Put egg noodles in boiling water for under a minute, remove from the pot to drain. Add a small amount of heated cooking oil in the noodles to keep them from sticking, mix with chopsticks.
Step 3
Mix the sauce with light soy sauce, dark soy sauce, oyster sauce, sugar, black pepper and water.
Step 4
Add cooking oil in a skillet, further put egg noodles in to stir fry on medium low heat. Gently stir and fry with chopsticks (repeat this motion for a few minutes) until both sides are a bit brown and crispy. Remove from the heat.
Step 5
Add cooking oil in the skillet, put sliced onion, carrot, bean sprouts and shrimp in to mix for under a minute. Further add in pre-cooked noodles in to mix. Stir gently with chopsticks.
Step 6
Further add in the sauce mixture to mix. Stir gently again with chopsticks until it’s fully seasoned and colored. Garnish with sliced green onion and stir well before plating.
