Ingredients
4 servings
3 bulbsroasted garlic
3sweet onions
medium, sliced caramelized
extra virgin olive oil
1 stickbutter
bacon fat
2 poundschicken breast
pounded to 1/2"
8 ozsliced mushrooms
1zucchini
large, chopped into 1/2" cubes
10 ozbaby spinach
½ cchicken broth
¾ cheavy cream
salt
to taste
pepper
to taste
1 tspthyme
½ tsppoultry seasoning
¼ tsprosemary
½ tsporegano
½ tspbasil
2 Tbspflour
¾ csour cream
Instructions
Step 1
Roast garlic drizzled with olive oil and wrapped in foil at 425° in toaster oven for 45-60 minutes. When cooled extract garlic, mush to a paste and set aside.
Step 2
Caramelize onions. Drain and set aside.
Step 3
Melt 1/2 stick of butter in a large frying pan with bacon fat, as desired. Season tops of breasts with salt and pepper, place spiced side down and season the other side. Fry until cooked through, browning both sides well. Remove and set aside.
Step 4
Add remaining butter and additional bacon fat as desired to the pan. Add zucchini. Cook 1-2 minutes, add mushrooms, onions and garlic and cook 1-2 minutes more. Add spinach and saute until wilted. Reduce heat and add chicken back to the pan.
Step 5
In a medium-sized bowl, whisk broth, cream, and spices together, pour over chicken and stir in sour cream. Cook until reduced and thickened stirring frequently to avoid sticking.
