Ingredients
8 servings
3chicken breasts
4 cupslow-sodium chicken broth
1white onion
diced
4poblano peppers
diced
1jalapeño
diced
1lime
juiced
1 Tbspminced garlic
salt
to taste
pepper
to taste
cumin
to taste
garlic powder
to taste
onion powder
to taste
2bay leaves
8 ozcream cheese
8 ozsharp cheddar cheese
shredded
To serve
Instructions
Step 1
Add all ingredients except for cream cheese and cheddar cheese to the slow cooker
Step 2
Cover and cook on low for 6-8 hours
Step 3
Pick out the bay leaves and discard
Step 4
Remove chicken and shred - do not return to slow cooker yet
Step 5
Add about 4 ladles of the broth to a blender, along with the cream cheese and pulse until smooth
Step 6
Pour mixture back into slow cooker. Stir in the cheese and add chicken back to the slow cooker and serve with desired toppings
