Step 1
Rough chop the red onion. Melt butter in large pan and sauté onions. Crush peeled tomatoes by hand or with a heavy spoon and add to pan with onions. Take 28oz can and fill with 3/4 to 1 full can of water, pending desired consistency. Add salt, pepper and red pepper flakes to taste. Bring to boil. Then immediately reduce heat to lowest setting and let simmer 30 minutes. Transfer contents of pan to blender and blast on low to medium. This will break down any tomato chunks and emulsify the onions. Put back in pan and serve.
Step 2
Due to the acidity, this soup will last for up to a week in the fridge.
