Chicken Enchiladas

Ingredients
8 servings

1 cupsweet onion
diced

3garlic cloves
minced

1 Tbspextra virgin olive oil

2 cupsfresh baby spinach
chopped

2 x 4.5 ozcans chopped green chiles
drained

3 cupsshredded rotisserie chicken

1 x 8 ozcream cheese
package, cubed and softened

2 cupsshredded pepper Jack cheese

⅓ cupfresh cilantro
chopped
8-size flour tortillas
8-inch, soft taco
Instructions
Step 1
Preheat oven to 350°.
Step 2
Sauté onion and garlic in hot oil in a large skillet over medium heat 5 minutes or until tender.
Step 3
Add spinach and green chiles; sauté 1 to 2 minutes or until spinach is wilted.
Step 4
Sur in chicken and next 3 ingredients, and cook, stirring constantly .
Step 5
5 minutes or until cheeses melt.
Step 6
Add salt and pepper to taste.
Step 7
Spoon about /4 cup chicken mixture down center of each tortilla roll up tortillas.
Step 8
Place rolled tortillas, seam sides down, in a lightly greased 13- x 9-inch baking dish. Lightly coat tortillas with EVOO.
Step 9
Bake at 350° for 30 to 35 minutes or until golden brown.
