Instructions
Step 1
Cover beans in water inside stock pot and soak overnight.
Step 2
Rinse beans and add about 6 cups of water. Turn on high heat. While waiting for them to boil, chop onion, bell pepper, parsley and garlic.
Step 3
In a hot frying pan, cook ham steak until browned on both sides, trimming fat as you go. (Leave the bone in.) Once cooked, add to stock pot.
Step 4
In same frying pan, saute seasonings in 2 T olive oil until onions are clear. Add to stock pot.
Step 5
Salt the broth generously. Sprinkle Tony C. generously as well.
Step 6
Cover and simmer for 90 minutes, stirring every 20 minutes.
Step 7
Slice sausage, fry in frying pan until browned, and add to stock pot.
Step 8
When beans are tender, put cornstarch in small cup and add enough water to liquify. Add to stock pot and turn up heat to boil, stirring constantly until broth thickens.
Step 9
Serve with Uncle Ben’s rice.
