Manakish - Cheese Bread

I’m obsessed with these Manakish and just finished the last one in my freezer a day ago. They're the perfect snack and freeze so so well. I used my Ooni pizza oven to make it and they turned out PERFECT. You can also bake them in a regular oven!!
Also these are just my version and not authentic but very much inspired by the Lebanese ones!

552gall purpose flour
1 ½ cupswater
lukewarm, 100°-110°F
42golive oil
1 Tbspyeast
1 ½ tspsalt
1 Tbspsugar
+ 1 tsp for the yeast

Instructions
Step 1
In a large mixing bowl add the water, 1 tsp sugar and 1 tbsp yeast. Whisk it together and let it rest for about 5-10 minutes, until it becomes bubbly and frothy.
Step 2
Add 3 tbsp oil to the mixture and mix it well. Then 2 cups flour, 1 ½ tsp salt and 1 tbsp sugar.
Step 3
Using the hook attachment on your stand mixer, or a spatula, bring the dough together until combined. Then add in the rest of the flour and knead until you get a soft, smooth and elastic dough. (if kneading with hands, when the dough comes together but it still scraggy, dump it onto a countertop and knead with the heel of your hand) The dough should be a bit tacky (when you touch it, it sort of sticks to your fingers but when you remove them, no dough comes off on yout fingers). You can also do the window pane test to make sure you have kneaded your dough enough. Take a small chunk of dough and gently stretch it. You should be able to stretch it thin enough to be able to see light through it. If it rips before you are able to do so, the gluten has not yet properly developed so you knead to knead it some more (haha get it).
Step 4
Shape the dough into a ball and transfer it into a greased bowl. Cover it and let it rest in a warm place for an hour or two, or until it is doubled in size.
Step 5
Grate 2 ½ cups of mozzarella cheese and crumble ½ cup of feta. Set aside
Step 6
Add zaatar into a small bowl and slowly pour in olive oil while mixing. You can add as much or as little as you would like.
Step 7
Preheat your Ooni to around 450°C (pizza oven) 20 minutes before cooking time OR preheat oven to 500°F. If using a stone plate in the oven, pop that in as you preheat it
Step 8
Punch the dough down and divide into 8 equal portions and shape them into balls. Let them rest for for 10-15 minutes.
Step 9
Flatten out the dough balls with your hands or a rolling pin. Add the cheese or zaatar mixture evenly across the surface except for the sides. Sprinkle on some nigella seeds on the cheese ones if you like. You can also combine the cheese and zaatar together!
Step 10
If making in the pizza oven or a stone plate in your regular oven, sprinkle your pizza peel with some flour and use it to transfer the manakish to the hot plate in the oven. If using a regular baking tray, line the tray with parchment and just place the manakish on there.
Step 11
In the pizza oven, keep a close eye on them and rotate it so it gets evenly cooked all over. It'll take about 1-2 minutes for it to cook fully and then just place it on a cooling rack for a bit and then cover.
Step 12
In a regular oven, it'll take about 10-15 minutes to cook, depending on your oven. You'll know its done when the cheese is all melted, and the crust and the bottom is cooked and has developed some color.

Enjoy right then or freeze to enjoy later!
