Vegan Green Goddess Dressing

This is a slightly modified version of Nora's vegan green goddess dressing. The original is fantastic, and that version is tagged as the source. The long "cook time" is due to the pistachios soaking for a creamier consistency. Step 1
Soak pistachios in salted water for 8+ hours, drain & rinse.
Step 2
Add nuts to blender, along with water, citrus juices, and salt. Blend until very smooth.
Step 3
Add fresh herbs and onions to blender, pulse or blend to combine. Nora prefers to pulse it so you can still see some tiny flakes of the herbs, but I like to blend it until very smooth.
Step 4
Dig in! You can refrigerate the rest of it for up to 5 days. It may thicken a bit in the refrigerator, so thin it with water if desired.
