The Chicken
8chicken thighs
4cloves garlic
1 Tbspwhite wine vinegar
1 Tbsplemon juice
1 Tbspextra virgin olive oil
1 TbspGreek yogurt
preferably full fat
2 tspdried oregano
1 tspcumin
1 tspgarlic granules
1 tspblack pepper
1 tspwhite pepper
½ tspall spice
½ tspsalt

250mlgreek yogurt
0.33cucumber
3 clovesgarlic
2 Tbsplemon juice
2 Tbspextra virgin olive oil

Instructions
The Chicken
Step 1
Mix the chicken thighs with the marinade, cover with cling film, and marinade in the fridge overnight
Step 2
Slice a couple of centimetres off the potato to form a flat surface and lay it on an oven tray flat side down
Step 3
Place the wooden skewers a couple of inches apart jammed in the potato spiky side up
Step 4
Load the chicken thighs whole on the skewers one at a time to form a stack. Secure this in place with a half onion skewered on at the top
Step 5
Bake at 180C for 60-90 minutes until browned and cooked through, covered with foil for the first 30 minutes.
The Tzatsiki
Step 6
Grate the cucumber, and squeeze out as much liquid as possible using a cheese cloth or kitchen roll.
Step 7
Crush the garlic and then combine all the ingredients

Adjust the flavour with salt, pepper, and lemon juice to your liking
Step 9
Let sit in the fridge for at least an hour for the flavours to infuse

Dice up all the salad, add the lemon juice and olive oil and season with salt and pepper

Cook the fries

Load the wraps with tzatsiki, salad, fries and chicken

Fold the sides and roll up into a burrito

Seal seam side down in a grill pan on medium heat for 2 minutes, before roasting all the other sides
Step 15
Slice on an angle with the seam side down, serve up with sriracha
