Instructions
Step 1
Fry the shallots with some garlic FryLight until tender, then add garlic, coriander seeds, and curry powder / paste and cook for 1 minute.
Step 2
Then add coconut milk, peanut butter, and red lentils (rinse first), with 2 cups of water and bubble with the lid on for 15 minutes.
Step 3
Then add the tofu and spinach and cook for 3-5 minutes until warmed through. Finish with coriander.
