Red Lentil Daal (vegan & GF)
This family recipe was submitted to Cook the Commonwealth by Mohini, a second-generation Indian from Gujurat. This red lentil daal is always a delicious dish to eat with chapattis.

Ingredients
4 servings
300gRed Lentils
washed thoroughly and soaked for 10 minutes
6 tablespoonsflavourless oil
eg light olive or sunflower
1onion
thinly sliced lengthwise

Instructions
Step 1
Heat a large casserole or saucepan and add the oil.
Step 2
Add mustard seeds and wait for them to sizzle and then quickly add the onions.
Step 3
Allow the onions to soften
Step 4
Now add all of the dried spices, followed by the garlic, ginger and chilli paste and stir well for a minute.
Step 5
Drain the lentils and add to the onion mix and stir in well before adding approx. 2 pints of boiling water
Step 6
Bring to the boil again, turn the heat down, cover and simmer for approx 20-30 minutes or until the lentils are melting and breaking down.
Step 7
Adjust the seasoning, adding more salt/garam masala if needed.
Step 8
Serve garnished with fresh, chopped coriander.
