Instructions
Step 1
In a large bowl, combine all the flour, baking powder, baking soda and salt.
Step 2
In a separate bowl, whisk together skyr, milk, sugar, vanilla and eggs. (The original recipe on the website uses vanilla skyr and low fat milk, I use plain 3.6% and almond milk)
Step 3
Stir wet ingredients into the dry ingredients, while being careful not to over mix. Let the batter rest for about 10 minutes.
Step 4
Heat a nonstick skillet over medium heat and add a dab of butter. This is a very sticky batter, so to better form the pancakes, use slightly damp fingers to carefully press the top down for a more even pancake.
Step 5
Cook pancakes over medium heat until one side looks set and golden brown. Flip and cook until pancake is cooked through. These pancakes rise quite a bit. This should make around 10 pancakes
Step 6
Top with more skyr, berries, and a drizzle of maple syrup.
