Let’s make Thịt Kho Trứng (or Vietnamese Caramelized Pork Belly)🥘
Growing up, my mom’s thịt kho trứng was a very important part of my childhood. Though it is more commonly served during Tết, or Vietnamese new year, my family ate it so much it was a staple in our dinner rotations and when we had friends over, anyone who tried it fell in love. Don’t be fooled by the simplicity of the dish, the flavors are absolutely mind-blowing.
Ingredients:
-2lbs pork belly cut into 1 inch pieces (or pork shoulder to have less fat)
-6-8 eggs (hardboiled)
-1 small onion, chopped
-2 shallots, chopped
-6 cloves garlic, chopped
-3 tbsp fish sauce
-2 tbsp dark soy sauce
-1 tbsp black pepper
-2 tsp sugar
-12- 14oz. Coconut soda (or coconut water, or sprite if in a pinch)
-water (if needed)
-salt to taste
-green onions to garnish
1. Chop all ingredients and hardboil eggs (boil for ~20-25 mins)
2. In a pot, add in your sugar and have the heat on medium until the sugar JUST melts. Then add your pork belly and render the fat (~5mins).
3. Once pork belly has some color, add in your shallots, onions, and garlic. Stir until fragrant.
4. Add in the fish sauce and the black pepper, stir.
5. Add in the coconut soda and bring it to a light boil.
6. Once barely boiling, add in your eggs and submerge in the liquid. Cover and let simmer on low for about 1 hr 15 min until the pork belly is soft and tender.
7. Add in the dark soy sauce for color and flavor, and season to taste with some more pepper and salt.
8. Serve over rice and garnish with green onions. This is also typically served with pickled veggies and chili peppers!
