Instructions
Step 1
Peel eggplant, lay on paper towel with salt and pepper on both sides to absorb water.
Step 2
Dip in egg, then breadcrumbs (add salt, pepper, garlic)
Step 3
Add butter to pan and fry
Step 4
Remove eggplant to foil pan
Step 5
Add tomato sauce to pan with some sugar, lemon juice, salt, pepper and garlic. Reduce a little.
Step 6
Add sauce to foil pan over eggplant, sprinkle Parmesan cheese and shredded cheese on top.
Step 7
Bake for about 30 minutes at 350, covered.
