Maamoul cookies are known as the Arabic cookies with dates. Ma'amoul is very famous in the Middle East during religious holidays. Along with other middle eastern cookies like Kahk, these cookies are made in huge quantities during festive days to celebrate and share with neighbors and guests.

Ingredients

500gsemolina
1 ½ cupall purpose flour
½ cupmilk powder
⅔ cupunsalted butter
melted, or ghee
½ cupvegetable oil
1 tspground nutmeg
or mahleb
¼ tspsalt
½ tspbaking powder
¼ cupmilk
1 tspvanilla extract
¼ cuprose water
or orange blossom water

Instructions
Step 1
Melt the butter or ghee in microwave or stovetop but do not let it get too hot or boiling.
Step 2
In a large bowl mix together semolina, and melted butter or ghee. Cover and set aside for 2-3 hours or over night.
Step 3
Add the flour, powdered milk, nutmeg or mahlab, baking powder, and salt. Mix together until we’ll combined.
Step 4
Add the milk vanilla extract, yeast mixture, and rose water or orange blossom water. Mix until a dough is formed. Cover and allow to rest for 1 hour.
Step 5
Divide the dough into 24 equal balls.

Preheat the oven to 400F( 204C).

For the date filling. Mix together mashed dates and oil. Form about 24 ball shapes a little smaller than the the dough balls.
Step 8
For the pistachio filling. Mix together crushed pistachio, sugar, and water. Form about 24 ball shaped a little smaller than the dough balls.
Step 9
With your thumb make a dent in each dough and fill with any of the filling.
Step 10
Close and roll into a ball. Press into a maamoul mold or flatten a bit and make some marks with a fork in a decorative way.
Step 11
Bake on the middle rack for 10 minutes then move up 1 rack for another 5 minutes until top is lightly golden.
Step 12
Let it cool down on the baking sheet for 3-4 minutes then transfer to a wire rack to cool completely.
Step 13
Dust with powdered sugar and garnish with crushed pistachios and serve. Enjoy!
