Instructions

Step 1
In an 8-quart pot, bring the stock to a gentle boil.

Add the rice and onion, cover, and simmer for about 40 minutes.
Step 3
Then add the carrots, celery, and white beans; simmer for 15 to 20 minutes more.
Step 4
Add the kale, parsley, rosemary, salt, and pepper; simmer for about 5 minutes more.
Step 5
Taste and adjust the salt and seasonings, if desired.
