Ingredients
4 servings
2 poundschicken breast
ish, I usually double the marinade and do some shrimp or tilapia for me
1red bell pepper
sliced into strips
1green bell pepper
also sliced into strips
1onion
sliced like fajitas
1sweet potato
diced and roasted
Orange
this is a little bougie for me, but it did add a little something the one and only time I did it, so be my guest
green onions
recipe s some and other stuff “for garnish, ”, and the concept of garnishes is SUPER dumb to me, green onions are actually really good in this ’d cut up 2 -3 stalks, depending on your onion love
⅓ cuphoney
⅓ cuporange juice
I’ve used all varieties - fresh, bottled, a couple tablespoons of concentrate, If you use fresh slices above, I’d also zest and add some here
2 tablespoonsbrown sugar
3 tablespoonsDijon mustard
I just used the bottled stuff and add an extra little squirt
1 tablespoonyellow mustard
1jalapeno
chopped, Depending on my meal plan for the week, and general motivation level, I also use a handful of pickled jalopeno slices and then chop ‘em up kinda rough
¾ tablespoonCajun seasoning
I’ve used store-bought, but I honestly think the mix I make myself is better eye
1garlic
2 clovesgarlic
but for real You don’t have to measure garlic I use 3-6 heaping spoonfuls of the chopped/minced stuff you can buy
Pepper
Salt
to taste
Instructions
Step 1
Mix all the marinade ingredients except the salt and pepper (which I apply directly to the protein before adding the marinade I also like to rub a little of the Cajun seasoning on the protein too). Pour sauce over protein and let marinate for 30 min or however long you want. C
Step 2
In the meantime, slice your veggies and sauté in a hot pan til tender and a liiiiittle bit charred. Like a good fajita-style char. Remove veggies from pan. I’d probably char the orange slices a bit here and then pour in all the marinade and protein*.
Step 3
ook over medium-high until protein is cooked through and sauce starts a’bubbling. Remove from heat and serve over rice/quinoa of choice and veggies. Also, on one memorable occasion, I ate it over mashed potatoes. I don’t know that I’d recommend it, but it wasn’t bad.
Step 4
*IF you want extra sauce to drizzle keep on hand, I divide the sauce in half and marinate the protein with one half and cook the other on its own. That way the shrimp don’t do the nasty to it in the fridge.
