Instructions
Step 1
Roast pepper pieces at 450 degrees for 20 minutes or until edges begin to blacken. Set aside. If you don’t feel comfortable cooking with this high of heat, cook for 35 minutes at 350.
Step 2
Cook pasta to Al dente. Drain all but 1/4 C of the pasta water.
Step 3
Heat oil in a large sauté pan over medium high heat. Add garlic and shallots. Cook until fragrant.
Step 4
Add broth and roasted peppers to the pan. Bring to a boil.
Step 5
Pour all of the pan contents into a blender. Blend on high for 10 seconds.
Step 6
Pour purée back into the pan, still keeping the heat on medium. Add in heavy cream. Mix until fully combined.
Step 7
Add in spinach and cheese. Cook until spinach has wilted.
Step 8
Add in pasta and the pasta water. Mix until combined.
Step 9
Add in salt and basil. Taste and adjust as needed.
