Step 1
1. Start by grabbing a roasting tray and adding in one roughly chopped red onion, 2 bell peppers, mushrooms and baby plum tomatoes.
Step 2
2. Then you want to drizzle over the olive oil before sprinkling over all of the seasoning.

3. Mix all of that together until combined and then make a space in the middle to place in a whole block of Boursin cheese.

4. Then whack that in the oven at Fan 200° Celsius / 425° Fahrenheit for 40 mins to cook.
Step 5
5. Whilst that’s cooking, add some salt to boiling water and cook your pasta for about 8 mins and then drain reserving some pasta water.
Step 6
6. Once the tray of veg is cooked, let it cool and then add into a blender cup with some of the cooled reserved pasta water.
Step 7
7. Once smooth, add the cooked pasta back into the saucepan along with the smooth creamy sauce.
Step 8
8. Heat for a few minutes before serving into four equal portions, enjoy 😊
