Instructions

Step 1
Thinly slice your onions then add them to a pan over medium heat with a drizzle of olive oil. Season with salt, cover with a lid and cook for about 15-20 mins or until your onions are nice and caramelised. Stir occasionally and set aside.
Step 2
In the same pan, melt butter and cook it for about 5 mins or until browned, add it to a blender along with your caramelised onions and a drizzle of pasta water and mix everything for 30 seconds or until creamy.
Step 3
In the meantime, boil your pasta in some salted water until al dente.
Step 4
In a bowl, add egg yolks, grated cheese, black pepper, lemon juice, zest and mix everything together with a fork.
Step 5
Add your onion cream to a pan over medium low heat, add your cooked pasta in along with a drizzle of pasta water and toss everything together for a minute to combine all the flavours.
Step 6
Turn the heat off, add your egg yolk/ cheese cream in and stir one last time, adding some more pasta water if necessary. Buon appetito!
