Preheat oven to 190°C

In a mixing bowl cream butter and sugar together until pale and fluffy

Add vanilla, egg and a few tbsp of flour to your mixing bowl. Mix until smooth

Sieve baking powder, salt and the rest of your flour into your mixing bowl. Mix until soft dough forms

Let dough rest un the fridge for 15-20min

Line 2 baking trays with parchment paper

Roll dough into balls (roughly the size of a golf ball) and put them on your baking tray

Make a dent in the center of your dough balls with your thumb and add your jam inside (if you don’t want jam proceed to step 9)

If you don’t want to add jam make a dent in the cookie with a fork for a nice design (optional)
Step 10
Bake cookies in the oven for 20-25 min
