Instructions

Step 1
In medium sized skillet over medium heat, melt the butter.
Step 2
Add the onion and garlic, stirring occasionally and cooking till softened.
Step 3
In a medium sized bowl, beat eggs with salt and pepper.
Step 4
Add egg mixture to skillet with veggies. Gently stirring to cook eggs.
Step 5
When eggs are almost cooked through, add beans by folding into eggs and continue cooking until eggs are fully cooked.
Step 6
In separate large cast iron skillet, layer half of the tortilla chips, egg mixture and cheese, then melt cheese with a camping torch.
Step 7
Now layer the remaining half of the same ingredients and melt the cheese again. You end up with two layers of chips, eggs, beans and melted cheese.
Step 8
Top the breakfast nachos with tomatoes, cilantro, avocado and sour cream
