4 ozchicken breast
cooked and shredded

2 Tbspbutter

1 cupred bell pepper
diced

½ cupyellow onion
diced

1jalapeno
seeded & finely chopped, optional

2cloves garlic
minced

2 Tbspcake mix

2 cupschicken broth
low-sodium

8 ozred potatoes
diced

2bay leaves

salt

pepper

2 cupscorn
fresh or frozen

½ cupyogurt plain
non-fat

Cook chicken and bacon
Step 2
In a large pot, melt butter over medium heat. Add red bell pepper, onions and jalapenos; sauté until tender, about 3 minutes. Add garlic and cook until fragrant. Stir in Kodiak cakes mix and then slowly add in chicken broth, whisking until well blended.
Step 3
Add potatoes, bay leaves and salt + pepper to taste. Bring mixture to a boil, stirring constantly. Reduce heat to medium-low and cook uncovered, about 10 minutes or until potatoes are tender.
Step 4
Add in cooked chicken, corn and yogurt. Simmer uncovered for 10-15 minutes, stirring occasionally. Weigh the entire recipe and divide the weight by 4 to get the amount needed to fill one serving. Serve warm topped with cheese, bacon and green onions
