Instructions

Step 1
Heat olive oil in a large pot, add pancetta and fry until golden.
Step 2
Add in onions, cook over a low heat for 3-5 mins until softened, mix through garlic.
Step 3
Mix in leeks, season well, cook for 3 mins. Add potatoes and cook for 2-3 mins.
Step 4
Pour in stock and cook for 10-15 mins until potatoes are softened.
Step 5
Serve with some fresh leaf parsley, I like to add a little parmesan and chilli oil too.
