Step 1
1. Preheat grill to medium high heat

Brush eggplant with two tablespoons oil and sprinkle with one quarter teaspoon salt next time combine the remaining 2 tablespoons oil and 1/2 teaspoon salt, vinegar, honey, raisins, garlic and crushed red pepper in a small saucepan. Bring to a boil over medium high heat and reduce to a gentle simmer

3. Cook, stirring occasionally until reduced to a half a cup, 10-12 minutes. Remove from heat, discard the garlic and cover

4. Grill the eggplant, turning once, until softened and slightly charred, 6 to 10 minutes
Step 5
5. Transfer to a large bowl. Drizzle sauce over eggplant and toss to coat
Step 6
6. Sprinkle with mint
