Instructions
Step 1
Step 1 Bring a pan of water to the boil, add the eggs then boil for 6 minutes or until cooked to your liking.
Step 2
Drain the eggs, run under cold water for a minute then peel and set aside.
Step 3
Step 2 Melt the butter with the spices in a small saucepan or in the microwave.
Step 4
Step 3 Toss the avocado in the lime juice, spoon on top of the toast then break the eggs up over the top.
Step 5
Scatter over the spiced butter, coriander and pumpkin seeds then serve.
