Ingredients

1 headcabbage
cut into 6 wedges
½ cupolive oil
divided in half
6 clovesgarlic
3 smashed roughly and 3 chopped very fine
1shallot
sliced
1apple
diced into 1/2 inch chunks
1 cupapple juice
¼ cupapple cider vinegar
2 Tbswhole grain mustard
6 sprigsthyme
salt
to taste
pepper
to taste
¼ cupsunflower seeds
1zest from lemon
2 Tbschives
chopped
1 Tbsneutral oil
Instructions
Step 1
-Turn your oven to 375*F and place a large oven proof skillet on the stove and turn it to medium high heat. Add the olive oil.
-Cut the cabbage into 6 equal wedges, leaving the core in tact. Working in batches of 3, sear both sides of the cabbage in the pan until it is well caramelized all over, then remove and repeat with the remaining 3.
-Lower the heat to medium and add a bit more olive oil if needed then add 3 smashed cloves of garlic, the sliced shallots and diced apple. Cook over medium, stirring every so often, for about 5 minutes, or until the aromatics begin to caramelize a bit. -Carefully pour in the apple juice and apple cider vinegar, then stir in the mustard and thyme sprigs. -Arrange the seared cabbage wedges in the pan and bring the mixture to a boil. Season with salt and pepper then turn off the heat and place the entire pan in the oven.
-Flip the cabbages after about 20 minutes, then cook another 20-30 until they are softened but still have a bit of a bite and have begun to caramelize well.
-While the cabbage cooks, heat the remaining 1/4 cup olive oil plus 1 tablespoon neutral oil until it is very hot.
-In a medium sized heat proof vessel place 3 cloves chopped garlic, the sunflower seeds, lemon zest and the chives.
-When the oil is very hot, carefully and slowly pour garlic mixture. Allow to cool a bit then stir in a bit of salt.
-Right before serving the cabbage, dress them by drizzling the sunflower mixture evenly over all the wedges and enjoy
