Biscoff cookies

These browned butter Biscoff Cookies are the most delicious, gooey, soft, warm and chewy cookies ever! They have a soft and gooey middle, filled with Biscoff spread, chunks of melted white chocolate and a perfect chewy edge. Topped with a Biscoff biscuit for a extra crunch! Is there a better cookie than this?! NO THERE IS NOT! Just note that if you want the absolute best cookies, you have to brown the butter and also place the cookie dough in the fridge for 48 hours! This will allow the flour to fully hydrate and enhance the flavor of the cookie! But if you can not wait 48 hours then 12 hours (overnight) will also work! BUT the best option is 48 hours, I promise it’s worth the wait!

Instructions

Step 1
- Brown the butter - Add the sugar into a bowl and then pour the butter in, mix well - Add one egg at the time while mixing - Add all the dry ingredients and blend well - Add in the white chocolate chunks and churched Biscoff biscuits chunks, blend - Place the cookie dough in the fridge for 48 h - Roll the dough into 10-12 balls, press them and fill them with the Biscoff spread, close and roll them - Place into the fridge for 30 min - Place them on a baking sheet and bake at 175 C or 350 F for 12 min, don’t forget to top them with a Biscoff biscuit! - ENJOY

Step 2
- Divide the Biscoff spread and roll them into balls - Divide the cookie dough into balls as well - Press the cookie dough balls until a little flat and add the Biscoff spread, roll them and place into fridge
