Instructions

Step 1
Get a small coconut and carefully make a hole. Drain out the coconut water and reserve it for later in a glass then halve the coconut and chop up the flesh . ( you can use coconut chips and coconut water if you don’t have a coconut ) Toast this with 3-5 Birds Eye chillies on a dry pan on medium heat then add one diced leek and a tablespoon of neutral oil and sauté For two minutes

Next add back in the coconut water then add hot chicken broth sliced chicken breast sliced mushrooms and kaffir lime leaves with a pinch of salt and bring to a simmer then add the coconut milk

Step 3
Zest and juice one lime then add that in with 2-3 tbsp fish sauce And 1 tbsp palm Sugar . You can use honey or maple syrup of you don’t have palm Sugar . Check this for seasoning and adjust as necessary . Serve then garnish with lime Wedges some Chopped chillies and some Cilantro /coriander
