Double Decker Reuben Nachos in Cast Iron
Great for a meal, but also as appetizers for twice as many people. If you don't have a cast iron skillet or would rather make this in a single layer version, this recipe can be adapted as single layer nachos on a sheet pan.

Ingredients
4 servings
8 oztortilla chips
I usually prefer white corn
1 x 14 ozsauerkraut
can, drained
1 x 12 ozcan corned beef
or 8-12 ounces from the deli
4 ozshredded Swiss cheese
½ cupthousand island dressing

Instructions
Step 1
Preheat oven to 400 degrees. Preheat cast iron skillet over medium heat.
Step 2
Prepare your ingredients: drain and squeeze sauerkraut, shred corned beef, and place thousand island dressing into a sandwich zip-lock bag so it's easy to drizzle.
Step 3
Layer tortilla chips in an even layer on the bottom of the skillet. Sprinkle up to half of the cheese on top of the chips. Spread half of the sauerkraut evenly over the chips and then, spread half of the corned beef over the top. Drizzle part of dressing on top. Then repeat the layers: chips, cheese, sauerkraut, corned beef. Finally, top with additional cheese if desired. Or, change the order on the upper layer to chips, sauerkraut, corned beef, cheese.
Step 4
Bake on a middle rack in a 400 degree oven for about 10 minutes.
