Instructions
Step 1
Fry the chorizo and garlic for a few minutes until the chorizo caramelises a bit.
Step 2
Put on some penne in boiling water. (Or make some courgette noodles and heat in the microwave for 30 seconds)
Step 3
Add the chopped tomatoes and half the parmesan. Cook until the sauce thickens slightly.
Step 4
Add the rocket and mozzarella. Cook until the mozzarella is partially melted and the rocket has wilted. Stir everything together.
Step 5
Serve over the pasta our courgette noodles and top with rest of the parmesan and parsley.
