Step 1
To make Arrabbiata, heat a pot of water, add salt to taste, and cook the pasta. Cook according to the package instructions. The peeled tomatoes should be drained. Then, transfer them to a bowl and break them up with a fork.
Step 2
Now, using a knife, chop the dried chili peppers.
Step 3
Then, in a pan, heat the oil and add the peeled garlic, black pepper and chili peppers. Allow to slowly brown before adding the tomatoes, stirring everything together, and adjusting the salt. Then, cover with a lid and cook for about 8 minutes, stirring occasionally, before removing the lid and garlic.
Step 4
Drain the pasta and toss it into the sauce, tossing briefly and adding more cooking water if necessary. Add the romano cheede,chopped parsley, stir once more, and serve.
