Instructions
Step 1
Put the pasta on to boil with a pinch of salt (usually 12 minutes for just over al dente).
Step 2
Dice the chorizo and fry in the oil for a couple of minutes until crisp
Step 3
Add the tinned tomato and garlic to the pan and cook hard until the sauce splits. You'll see the oil come out. Season with some salt.
Step 4
Drain the pasta reserving the cooking liquid.
Step 5
Return the pasta to the pot, add the sauce and pour pasta water back in until the sauce reaches a nice consistency without being watery.
Step 6
Plate and top with grated cheese.
