Arnold's cranberry sausage stuffing

Instructions
Step 1
Preheat the oven to 350°F. Grease a 9 x 13-inch baking dish with butter.

Place the stuffing cubes in a large mixing bowl.
Step 3
In a large sauté pan, melt the butter. Add the onions and celery and cook over medium heat, stirring occasionally, for about 8 minutes, or until the vegetables are soft. Add the vegetables to the stuffing cubes. (Don't wash the pan but scrape out every last bit of vegetables, otherwise they will burn in the next step.)
Step 4
In the same pan, cook the sausage over medium heat for 8-10 minutes, until browned and cooked through, breaking up the sausage with a metal spatula while cooking (the largest pieces should be no greater than ¼-inch). Add the browned sausage and fat to the bread cubes and vegetables.
Step 5
Add the eggs and beaten cranberry sauce. Add apple juice a little at a time, until entire mixture is dampened but not mushy. For less moist stuffing use less apple juice.
Step 6
Cook for 65-75 minutes. You can uncover it halfway through to crisp up the top
For muffins
Step 7
Using a tablespoon, transfer mounds of the stuffing mixture to each muffin tin. Be sure to tightly pack the stuffing in each of the muffin cups. This will make sure the mixture adheres to itself and the muffins don’t fall apart. You’ll end up with 9 stuffing muffins.
Step 8
Bake for 35-40 minutes, until top is browned. To remove, take a butter knife and go around each of the stuffing muffins’ outer edge. Using your knife, gently lift it up out of the muffin tins. Serve warm.
