Instructions
Step 1
Rest lamb out of fridge for 30 min.

Step 2
Evenly salt, pepper and spice the chops with the masala spice and garlic powder





Step 3
Heat a cast iron skillet to smoke point, then reduce heat. Pan should be just below smokepoint

Step 4
oil the pan and add lamb chops, sear for 2 minutes per side, cooking in the pan flipping every 2 minutes until desired doneness is reached (8 min rare-med rare)






Step 5
pull from pan and rest chops covered in foil for at least 5 minutes

Step 6
plate and garnish with fresh mint leaves
