A real crowd pleaser! This is an easy but delicious recipe that will have everyone wanting more! Salmon fillets with a creamy tomato & spinach sauce.
Best served with rice or pasta.

Ingredients
4 servings
2 Tbspextra virgin olive oil
3 tspgarlic
minced
1brown onion
large
250gcherry tomatoes
Chicken stock pot
200mlwater
140glight cream cheese
2 tspsmoked paprika
1 tspdried oregano
1 tspsalt
1 tspground black pepper
½ tspcayenne pepper
1 Tbspfresh parsley
chopped
4 handfulsbaby spinach
Salmon
Instructions
Step 1
Dice the onion & chop the cherry tomatoes in half.
Step 2
Season the salmon with salt & pepper and fry in a large hot pan on medium heat, with the olive oil for 3-4 minutes on each side.
Step 3
Remove the salmon from the pan & set aside.
Step 4
Add the diced onion to the same pan with the minced garlic & fry for a couple of mins till soft & fragrant
Step 5
Add the cherry tomatoes, stock pot, water & bring to a simmer.
Simmer till slightly reduced.
Step 6
Add the light cream cheese, all the spices & parsley. Stir together.
Step 7
Add the spinach & wilt into the sauce before adding the salmon back to the pan & heat through.
Step 8
Top with more parsley to garnish & serve with rice or pasta.
