Step 1
HEAT 1 tablespoon oil in large skillet over medium heat. Cook scallions and spinach for a minute, stirring

TRANSFER mixture to a large bowl, add all eggs, and beat to mix.
Step 3
PREHEAT broiler. heat remaining oil in skillet over medium heat. pour egg mixture in skillet and scatter tomatoes on top. cover and cook for 4 minutes or until eggs are set around the edges.
Step 4
BROIL 5" from heat for 4 minutes, or until the frittata is lightly browned and the center is set. Top with cheese and let stand for one minute, serve with slice of toast.
