Ingredients
8 servings

3 poundschuck roast
trimmed of extra fat and cut into 2-inch chunks

½ cupbeef broth
homemade, or ckn

2chipotle chiles in adobo sauce
medium, add more if preferred

6cloves garlic
minced

1onion
small, sliced

1 tablespoonapple cider vinegar

1juice of lime

1 tablespoondried oregano

1 teaspoonsmoked paprika

1 tablespooncumin

1 teaspoonsea salt

1 teaspoonblack pepper

1 teaspooncoriander

2whole bay leaf

1green bell pepper

adobo
to taste
Instructions
Step 1
Add all the ingredients, except beef, green peppers and bay leaves to a blender and puree until the mixture is smooth.
marinate overnight in the fridge.














Step 2
Add beef in marinade to slow cooker.

Step 3
Cook for about 4-6 hours on HIGH or for about 8-10 hours on LOW. The beef is very tender and falls apart when shredded with a fork.


Step 4
Remove the bay leaves and discard.
Step 5
Shred the meat using two forks into the cooking juices. Let the beef absorb some of the juices for about 30 more minutes before serving.

Step 6
Use a slotted spoon or tongs to serve.

Step 7
Make white rice and small salad
